Flashback...

I have spent most of the day putting together my scrapbook from high school...yes, high school. I've had newspaper clippings, momentos and pictures sitting in a couple of boxes for 10 years now. About a year ago I mentioned a particular favorite picture of mine to Tony, and I was so excited to run across it a few minutes ago.

The cool band nerds back in 1997 (and yes, that's a pillow tied around Tony's head). Man, those were the days...

Baby Stuff!

Well, things are starting to come together! Dad has the crib springs and other hardware on order, and he's finalizing the plans for that and the dresser! I can't wait to see them!

I got my diaper bag and little stuffed elephant in! I found my bag on a deal-a-day website for over 50% off! I've never used a diaper bag before, but I imagine that this one will work great - plenty of pockets, key clip, changing pad, wipe case, etc., etc. I finally gave in and it's also my first purchase with pink on it! *gasp!* I know, I know. I'm having a girl, so I should get something with pink on it!!


I mentioned in an earlier post that Ant finished painting the nursery last night...I love it! We still have a few color accents we want to do, but we'll wait until we get the furniture and everything set up before we decide exactly what. We have several ideas, but we're not sure yet which would look best. I'll wait to post pictures until it's done, but we are going with something that is modern and fun! It doesn't really fit in with the rest of our neutral house, but it will look awesome!! :)

Pregnancy Cravings

I have been pretty blessed (I guess that's the word), that I haven't had any really crazy cravings so far. I lost my sweet tooth for most of the first half of the pregnancy, but it definitely came back a few weeks ago! Oh, and I've also been on a banana kick the past few months. I can't get enough!

One thing I do crave, and I've been making it a LOT, is a recipe that Anthony actually introduced me to a few weeks ago. I think now he wished he wouldn't have! I had seen the recipe in my Betty Crocker cookbook a million times, but I always turned my nose up at it because there's peanut butter in it. I like peanut butter, but in a chicken dish? The final product tastes nothing like you'd think, though, and you have to try it!!

INDONESIAN PEANUT CHICKEN
Cut up chicken parts - legs, thighs, wings, etc.* -- I use a couple of pounds of chicken breasts, cut into smaller chicken strip sized pieces
2 tsbp oil
1 medium onion, diced -- I use red onion
1 small red bell pepper, diced
1/3 cup of smooth peanut butter
1/4 cup of chili sauce -- we just use taco sauce!
1 cup of water
salt and pepper
dash of cayenne pepper
Salted, or unsalted peanuts, for garnish
Heat oil in a large skillet until hot. Salt & pepper chicken and add to oil. Cook thoroughtly until no longer pink on the inside. Remove chicken from skillet, and keep warm. Remove all but 1 T. drippings from the skillet, and heat over medium heat.
Add onion to hot skillet, and cook until translucent. Reduce heat, and add red bell pepper, peanut butter, chili sauce and cayenne pepper. Stir until all combined. Add water slowly, wisking throughout. Sauce will thicken as it cooks. Season with salt and pepper, to taste. Add chicken to mixture, and heat to boiling. Reduce and simmer uncovered about 5 minutes. Continue to spoon sauce over chicken while cooking. Garnish with chopped peanuts. Serve!

I season the chicken with s&p and red pepper flakes or cayenne pepper before cooking. I also cook the red onion and bell pepper together, then I add the peanut butter, chile sauce, etc. Oh, and I leave off the peanuts. That's it! I serve it over brown rice.

Mmmm! You have to let me know if you try it. I promise you won't be disappointed! :)

Ice Day #2!

Last night as Ant was finishing up painting the nursery :), the frozen stuff started to fall. This morning we had ice everywhere! Ant had to get to work by noon, and my work just made the call to open at 1. I called my boss, though, and told him I was pulling the pregnant card and not risking getting out in this mess, especially considering I'm a huge wuss and scared of even driving in the rain! There's no way I'd make it over the 10+ overpasses in my 20-mile commute (I go through the airport to work, so even though they're not huge, long overpasses, there's still too many of them!).

So this afternoon Zoe and I are having another lazy day at home. I could get used to wearing my pj's all day, every day...wonder if work would mind? Zoe's enjoying the sun that's started to peek through. I guess the top of her chair is more comfy than being in her chair!

Brownie Points for Me!

Several weeks ago the Rangers kicked off their promotional "Rangers Round Up" tour. We, of course, were at the first event! We went to a town hall meeting in Grapevine a couple of Fridays ago to listen to several of the players and coaches speak, then we got some autographs. Oh, and we were even on the news (but we didn't see it! ha ha!)! The next morning, we headed out to Mesquite bright and early for another autograph session! Here's our collection so far. There are a couple of duplicates, but you never know when you're going to need an extra Ian Kinsler or Chris Davis autographed ball...

Last Thursday was the big one. Josh Hamilton -- and my favorite, one of the announcers Tom Grieve, were scheduled to be at a town hall meeting in Arlington at 6:30. I high tailed it down there after work to try to get some autographs for the hubby (who had to work till 7), but when I got there over an hour early, I had to go stand in the back with all the other non-autograph getters. Apparently you had to get there by noon to get a pass to get autographs. Yep, they handed out passes to the first several hundred because of Hamilton. I put my name in the fishbowl for the few prizes they give out and stuck around to hear the guys talk. Needless to say, I walked out with this prize...

Go me. :)

Ice Day!

The weather is just rainy and cold right now, but the weather man predicts it will get pretty bad as the day goes on. My work is closed today :) but unfortunately, Ant has to go in. :( It's funny how I drag out of bed every single morning when my alarm goes off at 6...this morning I was wide awake at 5 am!! So, I took advantage of the extra hour and made homemade banana nut muffins - yum!

Happy Birthday!

Happy belated birthday to my "little" Bubba, who turned 22 on January 20! I can't believe you're getting so old! :P Love you. -Big sister


And another happy belated birthday to my sweet Zoe, who turned 4 yesterday! I was a little too tired to make her homemade birthday treats this year, so she got a Ritz cracker and peanut butter sandwich instead! :) I need to get back to baking before I have zero time whatsoever!
